Cake Balls

Well i joined the revolution and made my first batch of cake balls (giggle away, as Jamie says i said cake and balls in the same sentence) And they were nothing short of amazing. They not only are one of the most easiest 'cakes' to make they are absolutely scrumdiddlyumptious. if your notorious for over cooking your cakes and they are kinda dry? this recipe is for you. because its impossible to mess up. Serious. Try, i dare you.

Whatcha need:

1 box of your favorite cake mixes
1 can of a complementary icing
2 bags of bakers chocolate disc's or just regular chocolate chips (these melt in your hands much easier, but who cares right?)

What ya need to do next:

1) Make your cake according to the box

2) once cake is done, let cool for 20-30 minutes until its not super hot

3) crumble cake into mice size crumbles in large bowl

4) add in your one can of frosting, mix well, really well, until it becomes like a truffle

5) You can skip this step (but i wouldn't) Put dough in fridge for 2 hours or overnight so it is firm and easy to work with

5) use a melon baller and ball up your balls. Yep ball up your balls.

6) Place balls on cookie sheet and put in freezer for 30min-1 hour (if you skip this step your balls will fall apart on the chocolate coating part- jus sayin....

7) While your balls are on ice (haha i crack myself up) Begin the heating of the chocolate

8) In a double boiler, make sure water DOES NOT TOUCH  TOP PAN where chocolate will be. It will make it burnt, grainy and unusable. keep temperature on medium, just because its a good round temp for this.

9) Put chocolate in double boiler and begin to melt, stir with spatula to make sure its evenly melting.

10) Get your balls and poke with a toothpick and roll around in the chocolate. Once completely covered, put on wax paper to cool. If they begin to fall apart during this stage, put back in freezer for a little bit.

BEEN THERE DONE THAT NOTE: Make sure to add any toppings such as sprinkles at this time because the chocolate will harden quickly.

They are now ready to eat! I prefer to keep them in the fridge because there is nothing better than a dense cold yummy cake ball with a crunch of chocolate.
